The goodness of snacking is the plethora of choices. Since I discovered that these Kellogg's cereals have zero percent saturated fat for every three-fourths cup, I am loving Kelloggs! I make a sandwich bag of my own trailmix and snack my way to slimness. The other choice is the amazingly tasty Simply Nature vegetable chips of roots from Aldi. Simply a confluence of color, crunch, and sensation! Snack Girl confessed to falling in love with the sweet potato chips (and so have I), and Ali Ebright also confessed to falling in love with the Simply Nature vegetable chips. I always have scooped black-eyed peas with a slice of bread. Today, however, and looking for a healthy snack, something in me was very inventive. I laid a slice of bread down on a paper plate, figuring that if it tasted bad, I would hurl both the concoction and the plate into the trashcan. Well, let me tell you! The surprise was mine! The black-eyed peas sandwich was so delicious I had to remind myself to take the pictures several times before the food vanished. Oh, my! My kitchen is an international one. Today the theme is Chinese. I made rice with chicken, broccoli, and carrots. I am eating with chopsticks. I used to take my food to work in this container, a ceramic replica of the famous Chinese paper food box. I always order white/steamed rice, none of that fried rice for me. Pollen has held me a hostage for years. Not 2018! The shackles have broken off! History: Pollen made me so miserable that I would receive pollen shots several times a week just to survive. Pollen used to make me so sick that I missed 30 days of work, one month in one academic year. Pollen used to immobilize me so much that my doctor suggested creating a unique medicine for me at $2,000 every four months. The worst part of pollen's effect is the fever that enervates me, drains me, makes me so miserable I stay homebound for days. One day in February 2018, I was coming back from an indoor wedding, but going in and out of the car and into buildings filled my nose, eyes, and throat with so much pollen that I was having difficulty driving. I was popping several cough drops every five minutes and jamming my fingers into my ears to relieve the itching and was hacking and sneezing and clicking my tongue to rid my throat of whatever was itching and clogging it. I wanted to serve the drinks in a deep platter. I did not have to worry about shallow serving trays. After dinner, we discovered mixed drinks and cocktails. We discovered that drinks go well with movies, so we had a Nigerian-movie marathon. I now can watch Nigerian movies without breaking down. Or maybe the alcohol blurred the pain. Hot Rum Cider: Rum-spiked hot apple cider topped with cinnamon sprinkled whipped cream: The secret to these drinks is reducing the amount of alcohol to allow sampling as many drinks as possible. Hot Spiked Cocoa Recipe: Irish Cream, hot cocoa, and whipped cream. Cocoa Cherry Heaven: The cherry was supposed to float on a cloud of whipped cream. but it kept sinking to the bottom. Getting the events started the day before. I generally do not like to cook anything the day before since it looks and feels like leftover. However, the Strawberry Bottom Cheesecake needs a while to set. Begin with fresh strawberries; chop into chunks. Strawberry glaze--3 tablespoonfuls; mix Mix some more. Graham cracker pie crust Line the bottom of crust with strawberry glaze. Pour in the strawberry glaze mix and level. 4oz of sour cream, cream cheese, and whipped cream, a drop of liquid nutmeg extract, and 2 tablespoons of sugar. Whip until blended. Scoop all cream cheese mix on top of strawberry glaze mix and level. Wipe around the corners to allow for closing of the cover. Fold pan edges around the rim of cover. I am a sunny person and like my eggs sunny. Gushing will not do! I don't want my eggs running away. I flip the sunny side over until it is firm. Unfortunately, that action flattens the reverse side, but that suits me fine. Three egg whites and one whole: low cholesterol for two Flip over. Flip again (below). Toasted slices; slather with orange marmalade. Cut "sunny side up" eggs into two portions. The sun peeks! Sprinkle fresh ground pepper for taste.
