I found a way to enjoy pancakes fearlessly without flour/gluten. This is so light and good!
One ripe banana
One whole egg
Whip egg
Mash banana
Mix both well
Grease pan
Pour
Flip to the other side
Done
Garnish with chocolate morsels
Enjoy!
