Image
I am battling late-night cravings because I work beyond 7 P.M., my dinner time. I read labels and try to stay on my healthy-eating course. It is difficult. I eat broccoli as part of a meal, in my smoothies, etc. This is seasoned (black pepper and parsley) broccoli unaccompanied as a late-night snack when that craving attacks me: zero calories. Natural Sugar vs. Added Sugar

Image
Truth be told, there is no versus anything since I do not add sugar to foods and drinks. I always err on the side of remaining natural, preferring earth's own sugars found in fruits. However, I stumbled upon 60+ derivatives and substitutes for sugar, and I was curious and wanted to share this with you.  Even when I buy a bottle of honey, I hardly use it. With a shelf-life of 2 - 3 years, honey is supposed to last for a long time. My story is that the honey separates or expires. My body rioted years ago and sent me messages as allergies.                                    I washed the red cabbage and discovered the pleasant surprise of blue water. I don't remember noticing that in the past.       Kale and most other green leafy vegetables can be boiled at the same time. The only caution is to add spinach last because it wilts. Otherwise, eat the spinach raw. As a matter of fact, Some leafy vegetables are better eaten raw. Red cabbage:  According to www.eatthe80.com, "Red cabbage is one of those with a great dose of Vitamin C, making it an antioxidant-rich, immune booster. In comparison to green cabbage, red cabbage (shown in the pot) contains 10x more vitamins, cancer-fighting flavonoids, and a winning amount of antioxidants that improve eye, teeth, bone, & immune health. Green cabbage:  Contains just about everything the red cabbage contains, but in smaller quantities except for cholesterol-fighting ability. It is a superfood. Spinach:   Medlife.com  states that raw spinach is healthier than cooked.

Chart from Pediaa.com   Wash kale (top left) and spinach (top right) vegetables with thoroughness because they grow close to the ground. Cook kale first because it is harder/firmer than spinach. However, they should retain their green color. Drain and keep the liquid/vegan broth for other dishes. Shred baked or broiled chicken and spread on the leafy vegetables. Sprinkle crushed red pepper and other herbs and spices and mix all to reveal the contrast. Serve warm or hot.  ************************************************************* --Frances Ohanenye maintains this visual cookbook.
