Sunny-side Vegetarian Waffle Sandwich

Why not have a breakfast sandwich? Prepare one whole, sunny side up. Toast two Belgian waffles. Sprinkle the waffles with honey. Make into a sandwich. Enjoy. But first, why did I end up with an orange yolk this morning? Curiosity took over. Explanation: Apparently, the color of food hens eat affects the color of the yolk. When hens eat xanthophylls found in carrots and such, the yolk turns orange. The Tastiest Black Bean, Gluten-free Brownies

Wheat flour unhinges millions of people who experience gluten allergy or intolerance. Research revealed that black bean flour has most of the same qualities as wheat flour, so I was ecstatic that I could eat brownies again without the adverse effects of gluten. This was a longer process, one of love and reward. Soft and Hard Mushroom Tacos

I also prepared the usual beef taco for those not daring enough to try a mushroom taco. Mushrooms exude liquid much like spinach. I collected and froze the broth.  I ate two mushroom tacos. They were tasty! The mushroom taco became a hit with the adventurous students and proved to be a conversation piece. Toppings and condiments: Two different kinds of cheese, salsa, guac, queso, lettuce, tomato, and jalapeño .
