Quick Scrambled Hash Browns and Eggs

Lately, I love making all-in-one dishes. When I heated the extra virgin olive oil, I had a vague idea where I was headed. Two eggs (one yolk only), one-fourth bulb fresh red onion, half cup of grilled hash brown potatoes, and shredded cheese later, and I created a unique breakfast. Sautee chopped onion in medium heat extra virgin olive oil (not fried). Pour in potatoes. Brown all lightly. Spread beaten egg over hash browns and onion. Scramble until eggs are mixed in and potatoes are golden brown. Remove from heat. Immediately, sprinkle finely shredded Italian-style cheese over scrambled hash browns and eggs while still hot. Vegetarian Antipasto

I don't eat stew or rice weekly or monthly.  I don't eat meat for months, so I cook different veggies in different ways.  This dish is an experimemtation with an all-veggie (cooked, roasted, and meatless) deviation from the regular Italian antipasto. Cooked/roasted vegetarian antipasto: shrimp, mushroom, broccoli, cauliflower, black olives, and asparagus. The Best Sweet Potato Casserole

Concoctions are my favorite way to cook. I love to create my own dishes from my creative culinary invention. I love to experiment with different palates, colors. consistencies, and textures. I knew the sweet potato would be soft and orange, the broccoli (green) would be a little hard, the tomatoes (red) would be mushy, so I made the codfish (white) a little hard so that it does not break apart and disappear.  Ingredients: One 14.5 oz can of diced tomatoes (mixed with sauteed onions and simmered in a medium pot until tartness is gone from the diced tomatoes: takes 30 - 50 minutes)  Extra virgin olive oil to sautee the onion, simmer the tomatoes, and marinate the sweet potatoes One big bulb of red onion (diced, sauteed in a frying pan, and transferred to the pot with diced tomatoes) Four medium sweet potatoes (peeled, cut  small , washed, and broiled or air-fried) One 16-oz fresh or frozen broccoli (Not steamed) Three frozen cod filets: Seasoned and baked on high heat to make the top har

Cottage Cheese on a Waffle for Breakfast

The bland taste of cottage cheese stopped me from enjoying its benefits. Now, it is time for beneficial foods to take care of me. I compared different brands of cottage cheese, and I chose Daisy. I made up cottage cheese as a dip for potato chips. It is tasty.  Healthline  suggested the following ways of tolerating cottage cheese. It tastes horrible on a waffle (my opinion). A tasty way: A dip with potato chips Here are some creative ways to eat cottage cheese: Pancakes or waffles.  Mix it into the batter as a substitute for milk. Salads.  Add it to your favorite salads for extra protein. Fruit.  Mix it with fruits like  berries , sliced bananas, peach slices, mandarin wedges, and melon chunks. Granola.  Top it with granola and drizzle it with honey. Sour cream substitute.  It works well as a  sour cream substitution . Dipping sauces.  Mix it into dipping sauces as a substitute for milk.
