Self-Control is Easy to Lose: I Was a Bad Girl!

Image
I have a confession and an atonement for my transgression. I never acted the way I did on this day when I walked into a German bakery and went crazy. I guess the smell of fresh pastries took me back to my own childhood. Anyway, the confession is that I lost my usual grip on eating and went on a carbohydrate binge for no apparent reason that I could decipher. Afterwards, the ceiling was swimming. Let's just say that I was bad! Like MJ said, "You know I'm bad...Who's bad?" I was, and I know it. My atonement is that I went on several cups of detox tea cleansing that night and ate little or no carb the next day and followed it up with fruits, veggie meal, and salad for the rest of the day. Two egg whites from free-roaming hens and hand-picked eggs. Add fat-free/skim milk and whisk. When onion is sauteed satisfactorily, add spinach, let cook briefly before pouring in egg white. Cut in two: half for now and half for later. --Frances Ohanenye mai

Lemon Butter Sauce with Virgin Red Hammer

Image
This story begins from the end. The food was so good:  mashed red potatoes, broccoli, and sauteed mushrooms and catfish in lemon butter sauce. Follow that with Virgin Red Hammer , which I refuse to call it by its blasphemous name, especially when putting the word, "Virgin," in front of it. Finally, polish it off with green tea. Have yourself a great night! Below: Cut two large red potatoes and boil. Above: saute half  medium red onion and two cloves of garlic. In bowl: filet of catfish, washed and cut Below: Add butter, seasoned salt, and black pepper in mashed potato. In pan, saute 8-10 chopped button mushrooms and 6 strips of filleted catfish; add one-third stick of butter and one-fourth cup of lemon juice. Shake in black pepper, ginger powder, crushed red pepper, parsley, and seasoned salt for taste and to take the zing off the lemon juice. Cover and simmer on low heat until sauce thickens and fish is done.     Season broccol

Pour Your Smoothie into a SMOL FLASK!

Image
SMOL FLASK is the acronym for the list of fruits, grain, and vegetable in my newest smoothie: s trawberry, m ango, o range juice, and l ime juice (SMOL); f lax seed, l emon juice, a pple, s pinach, and k iwi (FLASK). Of course, the word for little is spelled s-m-a-l-l. I am studying for a test; all I see are acronyms and mnemonics. Thanks for visiting. I appreciate you! The base of all my smoothies is citrus: orange, lemon, and lime. Add spinach, strawberry, kiwi, flax seed, apple, and mango.     Y-u-m-m-y and t-a-n-g-y!!  --Frances Ohanenye maintains this site. Mushroom & Fish Stuffed Onions

Image
I obtained this recipe from WebMD , but I wanted to make it into a meal. I still used the ingredients they featured for a vegetarian diet, but I added brown rice and farm-raised catfish. I turned the onion "bowls" face up and took the risk that they might collapse and lose their shape. The onion bowls held their shape and cradled the mushroom-fish-rice concoction nicely.  Because I am watching my cholesterol level, (and cheese is high in cholesterol), I inserted the cheddar into and sprinkled it on a few of the stuffed onion dish for anyone else who might want cheese. One cup brown rice: add butter; steam until done. One big white onion: cut in vertical half, wash, and separate.   Two tablespoonfuls of EVOL in pan    Chop remaining onion and saute with 4 strips of farm-raised catfish filet cut into small portions and fine-diced 5 pieces of button mushrooms (washed ahead of time). Turn off heat when done.   Vegetables in pot: broccoli, carrots, kidney beans
