Sunny Side up, Plantain, and Black-eyed Peas Breakfast

As a  child, I loved the combination of plantain and black-eyed peas. 
Here's to a beloved dish!
--Beans take an hour or two to cook to softness, so soak and cook the beans hours ahead.
--One ripe plantain sliced into ovals
--Two whole cage-free brown eggs.
