My Concocted Casserole!

In the classroom and in the kitchen, I adhere loosely to lesson plans and recipes, respectively.

I love to design my own lesson plans and invent my own recipes.

Last night, I looked through my cabinets, refrigerator, and freezer, and I made this "casserole."

Ingredients:
15 Small, round red potatoes
Fresh & washed spinach
Low-fat ground beef
4 Vine-ripe tomatoes
Medium red onion bulb, diced
Fresh ground black pepper 
Shredded red pepper 
Salt to taste

Method:
Sauté onion and ground beef in EVOL (extra virgin olive oil).
Sauté chopped tomatoes and chopped 
Let me tell you, it was so good, I ate almost half of it.
