Jollof Rice By Any Other Name...

Jollof rice (African) by any other name is rice casserole (American). I prepared this dish for my friend who was recuperating from a medical procedure. She could not use her arm let alone cook for her child and husband. I forgot to take pictures of the one I made for her in a long baking covered dish, so ours will have to do (in a smaller round baking dish and almost gone!). This food's color is real, not paint brushed like so many food pictures are: No faking here. It smelled so good and tasted so good, my friend told me she kept going to heat it and eat it. Thanks for the compliment!
 
I fried some plantains to accompany the dish I prepared for my friend, but I cut her plantains into small circles and golden brown. I like mine long and golden brown as well. 

 
 Ingredients: All natural--onions, garlic cloves, peas, carrots (diced), chicken breast cut into chunks, tomato sauce made from scratch with fresh tomatoes (no canned anything!), herbs and spices.
